This is actually not a problem but can be caused by settings you have selected in the Proof Output menu options in QuarkXPress 7. This can occur if you choose View > Proof Output > Grayscale. This feature offers the option to view the document in CMYK, RGB, Grayscale, and other modes. When the Grayscale option is selected, all colors displayed will change to grayscale. The same thing will occur in the Colors palette, where all color swatches will display in grayscale.
